BEETROOT AND SWEET POTATO SOUP

According to Ayurveda principle, the evening meal is cooked and served warm. The last meal of the day should be easily digestible, filling and nourishing. It should provide us with energy, but at the same time relax the body. It should be eaten before 7:00 p.m so that we can have a good sleep and start the next day well.

Which food meets all the requirements and is light and warm at the same time? That’s right, the soup. In Ayurveda, soups are considered to be a particularly nutritious and delicious way to end the day. They contain satiating carbohydrates and gently warmed natural products, as well as detoxifying ingredients. In contrast to popular opinion they aren’t ‘boring’, and can be served in a wide variety of ways.

Refreshing Fruity Soup

With this soup we refresh our mind and surprise our palate with a combination of citrus fruits and beetroot.

For the preparation we need the following ingredients:

– 1 cm ginger
– 2 small beetroot
– 200g sweet potato
– 250 ml coconut milk
– 500 ml water
– juice of 2-3 oranges
– 1/2 lemon
– 1/2 tsp ground cumin seeds
– 1/2 tsp amalaki powder
– 1 tbsp coconut oil
– salt, pepper

Preparation
  • Wash and chop vegetables
  • Chop beet especially finely
  • Squeeze juice from lemon and oranges
  • Create spice mix of cumin, salt, pepper and Amalaki powder
  • Heat coconut oil in a saucepan
  • Sauté vegetables and ginger in it
  • Also briefly roll chopped vegetables in it and then pour over coconut milk
  • Reduce heat to a minimum
  • Boil soup down for 20 minutes
  • Once vegetables are soft, add orange and lemon juice
  • Season with salt and pepper
