According to Ayurveda principle, the evening meal is cooked and served warm. The last meal of the day should be easily digestible, filling and nourishing. It should provide us with energy, but at the same time relax the body. It should be eaten before 7:00 p.m so that we can have a good sleep and start the next day well.
Which food meets all the requirements and is light and warm at the same time? That’s right, the soup. In Ayurveda, soups are considered to be a particularly nutritious and delicious way to end the day. They contain satiating carbohydrates and gently warmed natural products, as well as detoxifying ingredients. In contrast to popular opinion they aren’t ‘boring’, and can be served in a wide variety of ways.
Our invigorating lentil soup is rich in vegetable proteins, high-quality carbohydrates and valuable spices.
To prepare it, we need the following ingredients:
75 g red lentils
500 ml water
2 parsnips
3 tomatoes
1 shallot
1 tsp turmeric
1 tsp coriander seeds
1 tsp carob powder
1 tsp ginger
1 tsp salt
1 tbsp coconut oil
