RECIPE OF THE WEEK – HERBAL SOUP

A staple breakfast dish throughout Sri Lanka, this easy to prepare herbal soup provides you with a healthy kick to start your day. It combines two ‘Super foods’ – Gotu Kola and Mukunuwanna, one of which features in our 06 immunity boosting Ayurvedic herbs article.

Sri Lanka is blessed to have an abundance of plants and herbs which can be classified as ‘Superfoods’ naturally growing within the country. Therefore there are many variations of this soup. For example ‘Hathawariya’ is another plant whose leaves can be used as an added ingredient or by itself. The rice is added for the extra energy it provides to start the day, however if you wish you can omit it.

Ingredients
  • 100g Mukunuwanna
  • 100g Gotu Kola
  • 100g Grated Coconut
  • 50g Red Rice
  • 02 Cloves of Garlic
  • 750ml of water
  • A pinch of salt

Method
  • Wash, clean and cut the Gotu Kola and Mukunuwanna into small pieces.
  • Simultaneously wash the red Rice and cook in a rice cooker.
  • Add the cut Mukunuwanna and Gotu Kola, together with the Garlic, grated Coconut and water into a blender and blend till smooth.
  • Strain the mixture within the blender and add the rice to it.
  • Add the mixture to a pan and bring to boil.
  • Add a pinch of salt to taste.

If you find the soup to be too bitter for your liking, try adding ‘Hakuru’ if available, or substitute with any natural sweetener.
